Ingredients

Instructions

Cut beef

Cut very fresh, chilled beef into 2cm cubes. Do not mince.

Season

Toss beef cubes with melted niter kibbeh, awaze, and mitmita.

Serve immediately

Serve immediately with injera, ayib, and gomen.

Gored Gored is raw beef in cube form — the chunkier, bolder sibling of kitfo. Where kitfo is finely minced and delicate, gored gored presents the beef in substantial cubes that retain more of the meat's natural texture and chew. It is dressed with niter kibbeh and awaze (a paste of berbere, tej, and spices), giving it an intense, spicy heat.

Gored gored is considered one of Ethiopia's great tests of food confidence for visitors and reflects the country's long tradition of eating very fresh, high-quality raw beef. Ethiopian highlands cattle are known for their lean, flavorful meat. The dish is eaten with ayib (fresh cheese) to balance the heat and injera to scoop everything up.

Like kitfo, gored gored is associated with celebrations, special meals, and hospitality in Ethiopia. It is served in dedicated restaurants in Addis Ababa and reflects the same cultural confidence in using raw animal protein that has characterized East African highland cuisine for millennia.
