Instructions

Boil vegetables

Boil peeled potatoes, peas, and corn together until potato is completely soft.

Add greens

Add chopped pumpkin leaves or spinach in the last 5 minutes of cooking.

Mash

Drain and mash everything together with butter and salt until combined but slightly textured — small chunks of peas and corn are desirable.

Adjust and serve

Taste and adjust salt. Serve immediately while hot.

It is served alongside nyama choma (roasted goat) and other accompaniments at major gatherings.
