Escargot, the iconic French appetizer of cooked land snails, is one of the most distinctive dishes in French cuisine, known for its rich garlic-herb butter sauce and sophisticated presentation.

The consumption of snails dates back to prehistoric times, but it was the Romans who first considered them a delicacy. The modern French preparation of escargot gained popularity in the 19th century and has since become a symbol of French gastronomy.

The preparation of escargot is an art in itself. The snails are carefully cleaned and prepared before being placed in special escargot dishes or shells. They are then generously topped with a compound butter made of garlic, shallots, parsley, and other herbs. When baked, the butter melts into a fragrant sauce that complements the tender meat of the snails.

While the traditional recipe calls for parsley and garlic butter, many chefs create their own variations by incorporating different herbs like tarragon or thyme, or adding ingredients such as shallots, breadcrumbs, or even a splash of Pernod for an anise flavor.

In France, escargot is typically served as an appetizer, accompanied by crusty bread to soak up the delicious garlic butter sauce. Special utensils, including snail tongs and two-pronged snail forks, are traditionally used to extract the meat from the shells. A crisp white wine, particularly a Chablis or Muscadet, makes an excellent pairing.

From a nutritional standpoint, snails are surprisingly healthy, being high in protein and low in fat. However, the generous amount of butter used in the preparation makes this dish quite rich in calories and saturated fat. Those with shellfish allergies should exercise caution, as some people may have similar reactions to snails. The dish is naturally gluten-free unless breadcrumbs are added to the butter mixture.
