Ceviche de Pulpo is a delightful Peruvian seafood dish that showcases tender octopus marinated in fresh lime juice and seasoned with chili peppers, red onions, and cilantro. This refreshing variation of the classic ceviche perfectly balances the meaty texture of octopus with bright citrus flavors.

While traditional ceviche has ancient roots in Peru's coastal regions, the octopus version gained popularity in the mid-20th century as Japanese culinary influences began to shape Peruvian cuisine, particularly in the preparation of seafood. This fusion created what we now know as Ceviche de Pulpo.

Unlike other ceviches where raw seafood is "cooked" in citrus juice, the octopus is first boiled until tender before being marinated. This crucial step ensures the perfect texture - tender yet slightly chewy. The octopus is then cut into thin slices and marinated in a mixture of lime juice, finely chopped red onions, fresh cilantro, and ají (Peruvian chili peppers), creating a harmonious blend of flavors.

Modern interpretations of this dish might include additional ingredients like sweet corn, avocado, or even mango for added complexity. Some chefs experiment with different citrus combinations, incorporating orange or yuzu juice alongside the traditional lime. Others might add a touch of ginger or garlic for extra depth.

In Peru, Ceviche de Pulpo is typically served chilled as an appetizer or light main course. It's often accompanied by boiled sweet potatoes, corn (choclo), and lettuce leaves. You'll find this dish particularly popular in coastal restaurants and cevicherías, especially during the warmer months when diners seek refreshing meals.

From a nutritional perspective, this dish is relatively low in calories (around 150-200 calories per serving) and high in protein. Octopus is an excellent source of omega-3 fatty acids, vitamin B12, and minerals like iron and selenium. The lime juice adds vitamin C, while the raw onions and cilantro provide additional vitamins and antioxidants. However, those with seafood allergies should exercise caution, and the high acidity might not suit individuals with sensitive stomachs or acid reflux.
